Contests are where you can raise the performing stats of a Pokemon. Your Pokemon will perform attacks, with the judges giving stars/hearts if they liked it, once all the stars/hearts have been filled, the Pokemon who attacked last will gain them. Each move is categorised into appealing moves; Tough, Smart, Beauty, Cool, Cute. Using special appealing moves in that specialised contest will win you more stars/hearts.
In Omega Ruby and Alpha Sapphire, once you complete your first contest in Slateport you will be given a Cosplay Pikachu; you will be better in difference Contests, depending on the appeal. You can use a Cosplay Pikachu in normal battles, with each getting a special move. If you are playing Omega Ruby you will get Pikachu Rock Star, and with Alpha Sapphire you'll get Pikachu Pop Star.
