Firstly, you cannot catch all three in one play through. You will be able to catch one of the three Legendary Kanto Birds. This is determined by your Starter Pokemon you choice; it will be the bird which your Starter Pokemon has the Type-Advantage over, for example;
Chespin - Articuno
Fennekin - Zapdos
Froakie - Moltres

Anyways once you have complete the Elite Four and defeat AZ, beginning the after-game, one of the Legendary Birds will become a Roaming Pokemon. What this means is that it will constantly fly around the map, moving to different locations each time you cross into a new area.

Articuno will start in Routes 18 & 22
Zapdos will start in Routes 15 & 19
Moltres will start in Routes 4 & 8

To encounter them you need to have a Pokemon who is level 70 or under in the first slot in your party. Then spray a repel and run in the grass. If you don't find it, cross a boundary line, then quickly return to the route and run in the grass. This can take a couple of tries.

Once you encounter it, it will flee before you can make a move.

You then can track in the Coastal Pokedex. You then need to encounter it 11 more times in the wild.

Once all 11 encounters have been made, travel to Azure Bay and surf north to Sea Spirit's Den which is a small cave on an island in the north most part of the route. Go into the cave and walk towards the middle of the cave, the Legendary Bird will then fly down from the roof of the cave. You can then attempt to catch it.

Articuno is Ice/Flying Type. It is the most defence-based of the trio. Weak to Fire, Electric, Rock and Steel. Ability is Pressure. Moves: Ice Beam, Reflect, Hail &Tailwind.

Zapdos is Electric/Flying Type. It is the fastest of the trio. Weak to Rock & Ice. Ability is Pressure. Moves: Agility, Discharge, Rain Dance & Light Screen

Moltres is Fire/Flying Type. It is the most offensive-based of the trio. Weak to Water, Electric & Rock. Ability is Pressure. Moves: Safeguard, Air Slash, Sunny Day & Heatwave.
